There are quite a few sites that convert Youtube videos to audio, but I don't know about the itunes part since I don't use itunes.

I used Limewire for mp3's here and there, but since they are down I've been using this:

Works well and you can choose the quality of the output file, but as stated already, it really depends on the quality of the original video.
