If your radiator isn't filled past the temp sensor then the gauge will not give you a accurate reading.
I had it happened to me once on my full-size bronco and I thought I had a bad fan controller (aftermarket).

The sensor in the radiator is for the auxiliary fan, not the gauge. The sensor for the gauge is in the head.
Jack the car up from just behind the front drivers side fender on the frame rail. Get it as high as possible without lifting the passenger side tire off the ground. Then fill the overflow bottle until the level no longer drops. Keep the cap off and start the car. Add coolant as necessary and run the car until fully warmed up. Holding the throttle at 2000 rpm or so for a few seconds every few minutes will help circulate things. You may need to close the hood to help keep the heat in. Keep an eye on the temp gauge and don't let it get past 3/4. Once full warm, check the coolant level again, fill as needed, put the cap back on and lower the car back down. You should be fine after that.Comment

Haha so called that way to soon
Thought I was all good but a 20 minute drive later and now I can't even start the car without it bubbling out.
No problems till I pulled into home depot and I pop the hood(had been doing that all day just to make sure) and it started bubbling away and now the is coolant all over home depot parking lot And I just left....way to embarrassed

If it is bubbling out, it is too hot. You likely still have air in there or not enough coolant (or both).Comment

I'm just lost aboutt it....just amazing that this is what I'm crying for help about but there is a very slight steam(smoke?) That comes out of the coolant cap so im assuming thats eqhuast but still no oil in coolant or vice versa
Just had it run till it got to temp for maybe 5 min with slight coolant level drop and then I look over and its bubbling right out the top again, dumping a few liters on the ground
But homedepot has been fun to walk around for the last hour
Should I be able to smell the exhaust in the coolant at all cause I definetly don'tComment

So I know this is now totally in the wrong place to ask questions and is probably annoying as hell but since I already started it
is it possible I have a bad water pump gasket? At one point during my tbelt changeI loosened a water pump bolt thinking it was a tensioner bolt, I of course retightened it but maybe that was enough to break the seal and now its sucking air?
Oh still at home depot btw
Ok when i get home I am going to flush the whole system and start again

Yeah, don't give up. Had similar issues w/ my 318is. Just follow the directions that have been given and I'm sure it will be fine. I accidently overheated my eta all the way into the red a few times one day (b/c I was a moron (also it was like -30 out)) and the engine is still okay a year later.Comment

If you want to rule out a bad head gasket, pick up one of these:

It tests for exhaust gas in the coolant. Idiot proof test.
If the water pump gasket was bad, you would be leaking coolant, not sucking in air.
If you have access to an air compressor, pick up one of these:
