I remember doing this when crusing (on a boat, not for fags) but heard it is not longer necessary. I have to remeber to ask my wifes cousin who has a PHD in poultry science and all she does is work with eggs.

If you want an easier time of peeling, use eggs that are less than fresh, like 2 to 3 weeks old. They aren't even close to nasty at 4 weeks, so the 3 week mark is great.
Also: eggs will stay perfectly fine for up to a year if you cover them in vaseline.

I like to make egg sandwiches. I cook them on the stove for a few minutes, then put them in between some buttered bread with cheese(havarti or whatever) and cream cheese, salt, pepper, then I put the sandwich in the panini maker... I still like the yoke to be soft enough to "pop" and flood my sandwich with yoke!Leave a comment:

Cold water in a 3 quart pan 1 inch above the eggs. Heat to a boil and turn down to a simmer. 5 minutes and let rest. When cool refrigerate. Never peel hot. Never boil within one meal of consuming, it's just not proper.Leave a comment:

here it is. Ultimate egg salad.
eggs in pan covered with water and a couple table spoons vinegar.
Bring to boil, reduce to simmer for 5 minutes and remove from heat. let sit in water for additional 10 minutes.
Chill-deshell-mash
mayonaisse salt and pepper to taste
wickles relish (a spicy chili half sour pickle relish)
