. I just started, what's your set-up like? I don't have a cellar so I keep mine in an insulated chest. It's a little higher in temp than suggested but I think it will work until I find something better.

Some Imperial IPAs age into a barelywine type flavored beer. I quite enjoyed a year old FW double jack I got for free from my boss :P

    ^Quite the collection up there!

Hoptimum is great! Sure has a bite and is so aromatic. I wouldn't age it though, any of those strong IPAs are meant to be drunken asap. I think they lose their aromatics and flavors immediately so best enjoyed sooner rather than later.

I am aging all my sours though. A couple more of these, I absolutely loved this.

    Looking forward to this one.
    (Not my pic)

Any of you guys into aging? It's become a bit of a hobby of mine. Actually, kind of an obsession. I'm at the point where anything I buy over 10% abv I don't even drink, it goes into my basement to age.

Here is a small part of my collection. Sorry for crappy dumb phone pics.

Alesmith Speedway Stout. 12% Imperial Stout. Bottle Date N/A. Not boozy at all, delicious.

Dogfish Head World Wide Stout, 2008 & 2010. 18% roughly Have a few more bottles of this hiding. My favorite beer. Hard as hell to find, no batch in 2012 :(. If you find or have any bottles of this I will buy them. PM me.

Dogfish Head 120 Minute IPA. 2007,2009,2012,2013. Needs no introduction. I have nearly a case of this, will hopefully pick up more when the next batch is released. Give it a few years and it becomes a more mellow, complex beer.

Sierra Nevada Hoptimum. 10-11%. 2013 My favorite IPA, brewed once a year Aside from 120 minute, IPA's do not age well, they usually loose everything that makes them an IPA. I like to experiment though, so I'll crack it open next year when they brew it again.

Dogfish Head Olde School Barleywine. 15-18%. 2012 This is a little boozy fresh, will be great to see what it's like in 5 years. Will probably pick up more of this.

Dogfish Head Immort-Ale. 12%. 2012. Peet Smoked English Ale. Should age good.

Omnipollo Agamemnon: Swedish Imperial Stout brewed with Maple Syrup. 12.5% 2013 Had it on draft and absolutely knocked my socks off. Went out next day, drove 35 minutes to pick up the last 3 bottles I could find around me. Plus the bottle is awesome.

Brooklyn Brewery Monster Ale. 10.2% 2012. This is an awesome Barleywine, low abv as far as they usually go. Named after the Brewery Cat, BB decided to discontinue it after he passed away.

Dogfish Head Raison D'Extra. 20.5%!!! Bottled on 3/15/2007 (Ides of March) This may be one of the rarest beers on the planet. I only have one bottle, and am afraid to open it because in all likelihood will never get another one. Brewed once in '03 and once in '07. If you find a bottle of this I will pay a pretty penny for it. I can honestly say I've never even drank it. But it's Dogfish Head, it's rare, and I want it.

^ what did you think? Will probably open up my bottle tomorrow.

Apparently in each case there is a bottle with a different label, instead it has a cartoon of the 3 guys. I have to go look for it later.

I went Sly Foxxing this weekend with some friends. As usual, I took a bunch of pictures...

Started off with Oreily's Stout, Whitehorse Whit, and Helles Golden Lager.

    Played some Kan Jam!

Spotted cans for something new in the brewery!

Finished the evening on the patio with a bottle of Incubus Tripel Abbot for the guys and a bottle of Raspberry Reserve Wheat for the ladies.

    Man I love this place.
