I think you mean the 30's and yes my Gma taught me how to cook, so yeah depression era cooking is something I am good at. I can make an old boot taste good with the right combo of spices and long enough in the crock pot.

its just duck its like medium rare..with some greens and mashed potatoes and a pan gravy...oh and yellow beets :D

Speaking of eating from earlier/poorer times, I had calf's liver as an entree for a price fixe (sp??) dinner at a PB French place the other night, and it was delicious. Must try at home soon, assuming I can find a reputable source

Veal Liver is a Delicacy man, its not from poorer times its always been expensive.

This particular elk was pretty gamey. Sometimes you can salt it enough to get over that, but occasionally we need to resort to sugar too.

The gameyness is good, its not supposed to be like cow. I had a buddy get one a few years ago up in the high country, (it was a really hot summer and they had not come back down into the valleys much yet) and the fucking thing was just like Pine Sol, the dogs would not even eat it thats how bad it was.

I grew up on game critters, so I guess I am used to it and it does not bother me. I have not been home during elk season for the last 3 years and wont be this year either, so I have resort to yelling at you for ruining a elk steak on the internetz.

i eat deer meat that i kill every year, i kinda like the "wild" taste to it, its definitly not beef.
