It's not so much that squeezing the extra 1/10th, it's safety as well. Old tires will not have the same grip as fresh tires (which is also why you should be careful how you store your track day tires.) Remember, the tires are your ONLY connection to the road, and any decrease in traction ability (i.e. old, hard tires) will make the tire less predictable, and a less usable contact patch. Even on the street, you don't want to be in a emergency brake situation to realize that "oh shit, these tires don't have enough traction any more.."
Sometimes it's wise to listen to those who race, after all, we have to maintain our cars to a higher safety standard then the DMV requires, and our lives depend on the maintenance level of our tools.1991 325i MT2 Touring (JDM bro)

It's not like they've magically turned to granite. Yeah, they're old and have lost alot of their softness. But there's no way they're dangerously hard.
I'd bet they've got better grip than most street tires. The only thing I'd be concerned about might be using them on the street in the wet- THAT could be hairy.
