This is true but before it was running water/coolant 5050 combo and ran super hot.

Distilled water and water wetter has a higher boiling point from what I've been told.

My kit from Pelican's came with water wetter, but I'm still not just going to put water/water wetter alone. That worries the hell out of me.

Then add a few cups of anti freeze :)
Just whatever you do only only only use distilled water. I cannot stress that enough. In hose water/ non distilled water there is calcium and minerals that will cause rust and build up. My PO of the e30 ran hose water and my thermostat was stuck shut, it was so rusted in there I couldn't even pry it out of the housing.
