What kind of tools do you have? How much experience? There are a lot of factors in a job like this.
Make sure you have the right torque wrench, a dial wrench is preferred, this will help you ensure your bolts are getting tighter, not just yielding. You'll also want a wheel so you can get the angle torque right.
Make sure you have all new exhaust nuts, and a tool to get the ones that strip ( almost guaranteed to happen) off.
The intake manifold is the worst part imo. You can make things easier by installing the 323i manifold on the 731 head first.
Without swapping electronics, and having everything ready, I would guess 8-10 hours working at a non furious pace and taking breaks to eat, poop, etc.
