increased rigidity (no hole in roof), increased headroom (useful for taller folks or if you are going to put a cage in), reduced weight up high from cg.

mostly makes no difference on a street car but on a race car, yes.

how much does it really stiffen up the chassis though? surely the sunroof panel helps with some of the deflection?

It mostly helps with torsional strength. Cars with sunroofs have reduced polar monents of inertia and are more likely to yield when subjected to torsional forces.

Get a beer can, hold at both ends and try to twist it lightly. It won't crumple unless you apply alot of force.

Now cut a hole in the side of the can and try to twist it using the same force. It will crumple much easier.

Ok, so should I go to the junkyard and hack the roof off this 91 318is to save it from being crushed? I have a cabrio, so it's useless to me- but if someone wants it I am more than happy to help out...

A sunroof is an option. No sunroof is a lack of an option, not a delete.
