No. Think about the properties of aluminium, and you are just protecting an oilpan that's made of what? oh that's right aluminium.
.25 to .375 inch aluminum would be plenty strong enough. The factory one is only made out of .0625 to .09375 inch steel that has been folded to increase strength. A solid sheet of aluminum would be pleanty.

That thick of alum is going to weight just as much and cost 3x as much.

Aluminum is not made for this purpose. Alum is stronger than steel per weight for DUCTILITY but not for MALLEABILITY. Its a very soft metal that will bend VERY easily. That is why they dont use alum rods and alum blocks have to have cylinder liners.
steel is not ductile (at normal temps)at all so it resists bending much better.

I could just make them out of steel or something.

These will cost less than an oil pan+time+removing the broken pan (do you know how hard that is?)

Is it possible to fabricate an oil pan out of something that is more flexible and wouldn't crack?

this would be easier. Plus alum doesnt hold onto heat as well as iron. The plate would also protect your other parts from impacts or brush.
