Essentially I swapped a late model E36 rack into my E30 and I’m unsure of which fluid to fill the PS system with. The rack calls for Pentosin Power Steering Fluid, however the pump calls for ATF. Which fluid should I use to reduce the chance of damaging anything?

Most leaks occur at the rack seals, and the pump can certainly work with out of spec fluids. So, in this case I'd give the PSF a try, but in all likelihood either fluid will work, and seal leaks or foaming/performance issues will be a roll of the dice depending on condition/what was run before in each.

Use the red fluid, ATF. It is what I have used on our e30's with or without swapped racks. Try Google search (in my kind voice) using - r3v / power steering fluid
and there are lots of threads in here.

Swap out the steering pump reservoir if it's original, there's a filter on the bottom of that thing that could be 35 years old. It's cheap and easy to do at the time of swap.
