R888 are known to be one of the widest running street tires per size. Check how bad it is rubbing before you drive it much more, if it's really bad you could wear through the sidewalls and have to buy them over again.
So I was able to take a look and there doesn't seem to be any rubbing, its close though, but it definitely sounds like it. Any idea what it could be? Like I said, it begins at aprox 25mph and doesn't stop until dead stopped.

I recommend being able to slide a pencil (5mm) between the tire and the strut. If you can fit a pencil in there, it probably is not the tire rubbing.
Can you just rotate tires and see if the noise changes? its probably time to do that anyways.

So I had a chance to get the car on a lift. The tires are not touching, bit very close. The little hairs on the tire can touch it and no displacement when on the ground. Could it potentially be rubbing on at different speeds? Is it just tire noise? I love the grip with the 318i, but not sure I can stand the noise for that long.
so how much clearance do you actually have? Under load the entire assembly flexes, if there is barely any clearance then it it possible that during certain turns your tire rubs the strut.
My setup: 15x8 +20 225/45/15. If I use a wheel weight that goes on the edge of the lip it hits the strut in the front under load if i turn hard enough, when i drove straight nothing happened. Therefore, i have to use a stick on weight that goes on the barrel to fix this issue. Maybe you have this issue??
Another issue can possibly be your brake dust shield is bent and rubbing the rotor. Check to see if the shield is bent from its original position and bend it back if you have to.

No, that won't space your tires out. If it happened after installing R888's, it is because they're wider. R888's are without a doubt wider than those pedestrian KU25's.
What are your wheel specs?
