would i have to get spacers for the front and rear, or just the front?

i think it would look funny if i only had spacers on the front.

is it even possible to have a 16x7 wheel et 5 in the front with a 195/45 tire on?

sure, that would put the outside lip of the wheel 2mm further out in relation to 16x8et20 rotas

              I would run a 205 though.

low offset wheels can have problems clearing the calipers so beware.

oh, and you'd better have camber plates and rolled fenders.

ah ok, i wasnt too sure about it. the fenders would be heavily rolled.

                    Still confused on tire fitment...

As far as I understand it we can't put anything much larger in diameter than the stock tires, and they are approx 24". My question is how much larger can we go without running into interference issues? For example, on a 17x7.5 wheel the optimal size seems to be 215/40-17. That gives about a 24" tall tire. But what if we want a larger diameter tire to increase the rolling radius, are we limited to 24" tires or can we go up to say 24.5 or 25" tall tires?

Honestly, not much room to play with at all. Guys have tried 215/45/17 (which is 24.5-24.7 depending on tire used) with bad results.

I don't recommend anything larger than the 24.0".
