What kind of benefits would you expect with the 885 head? Anyoneknow of someone who's done a dyno and have seen before and after results?

No benefit dude. It already has the 885 head if its an 88 Eta. (this is fact plus the 2.5 casting verifies this)
Difference is it only has single valve springs and does not have the "i" cam.
So its the cam that will give you the gain.

Don't worry about either. Just get the maintenance up to par and start modding the regular stuff like suspension and wheels.
          Then r3v it. :D

Hotter cam, double valve springs. When you swap ECUs you will get better performance. So on and so forth. It WILL be faster than a stock 325i. Shit, my 2.7 with the flat top pistons and a cam is faster than a stock 325i and it isn't even tuned. I would expect a SETA motor to be faster than mine with the same cam.

If I were you I would buy an 885 head, rebuild it, add a 272 cam and some tuning and call it a day. You do need to buy an 885 head from a 325i though since the Seta heads were only 4 bearing and 325i's are 7 bearing.

You shouldn't feel too disappointed. I was actually looking for a SETA before I bought my 325i. It could be a fun and relatively cheap project. I also wouldn't worry about the compression differences, since it doesn't really amount to much in the end. There is some good info on 327i projects around here, but I think the best place to look is here:
