Update:
So I cleaned my garage up, took some shit out that has been there for 15 years, built a new bench and put in a computer with internet. It's way better for working on the 318 I can move around it and not worry about things hitting it.
I started to take the rear end out. Everything is undone except the parking brake cable, I have no clue on how to get it out. (HELP!!)

Pull the e-brake boot back, remove the two 10 mm locknuts holding the two cables in, then pull the rubber armored cable out from their bores right in front of the rear subframe. This may take some coaxing with a torch on low and / or plenty of rust penetrant.
OR, you can pull the rear brake disc off and remove the parking brake shoe expander. It fits into the e-brake cable with a short and stubby pin. Sometimes it gets rusted to the expander, though.

I tried the second one it won't pull out, I actually ripped the cable. Do I need to remove those 2 bolts on either side?
And I'm going to treat it well don't worry. I'm taking all of the rear end out to re-spray the wheel wells, subframe, clean the diff and change all the bushings out with urethane. I got a long piece of urethane stock so i'm just going to spin them out on a lathe.
The shop my brother does part design at has an electromotive Tec-II that I can buy off them to boost it. I'm going to do GC coilovers and put it on a set of 15x8 Rota Slip-streams. Should be some good times. I might boost it over the winter along with paint, and just get suspension wheels and tires done for the summer and drive around on that.1985 325e 2.8 Turbo VEMSComment

You have to remove the pin that holds the expander to the cable. Then you can pull the cable through. You might have to heat the expander up. It shouldn't really melt the liner of the parking brake cable. It should fall right out but sometimes that pin gets corroded in place.

If it has 15" weaves, it either has euroweaves or iX weaves. Check the wheel offset - if it's +41, they're iX weaves. Since you're in Canada, they're actually more likely to be euroweaves and you are a doubly lucky s.o.b. :P
(stock U.S. weaves were 14", european models had a 15" option)Comment

I'm not saying this to criticize you, but rather because I'm concerned. It appears from the photos that you have the jackstands supported on cinder blocks or something similar. I've read some tragic stories of guys supporting their car with cinder blocks only to have them catastrophically fail causing the car to come crashing down. It also appears the jack stands are sitting very close to the edges of the blocks.
Not trying to nag or tell you what to do but perhaps there's a safer way to prop up the car then the setup you have going now.
