Your bike shop doesn't know what they're talking about. My Pug came stock with 27" wheels, my Velocities are 700c and fit fine, even with fatter tires, The pic with the drop bars the tires were 700x32 iirc, a pretty high volume road tire by most standards. 700mm=27.5591 inches with 700c being a nominal term for tire diameter. As long as you get hubs with the right spacing, and don't run 700x45 cyclocross tires, you'll be fine.

The wheels and tires are leaps beyond the stock Bontrager 6000 wheels/Race lite tires.

Rode my first century a couple weekends ago. Was for a charity ride I'd been raising money for. The rest of my dudes dropped me at mile 65 and I've never had to push so hard to keep myself going. It was really gratifying once I hit the finish and I'm glad I kept pushing myself. Plus I was doing the ride for my Uncle who just passed away from cancer barely two months ago.
