Question is...
I want to run 225 50 15's(Falken Ziex 912 if brand matters)
Will I have rubbing issues without rolling the fenders?
Got a better tire size suggestion for the best looking wheel arch fill?

Those 912s will work without fender rolling on your early arches. If it was another tire, it wouldn't work (those are only 9.0" wide, while others are 9.2-9.3") and if it was a late model, it wouldn't work. Sounds like a perfect match to me.
BBS RS 039 16x7 et24 (have the 5.5" inner barrells) wheels when purchased. Just had them redrilled to 4x100 and powdercoated. Now I want to know what lips can fit and I need your guys help before I purchase ;)
Front I was thinking either 2.5" lips to make 16x8.5 or 3" to make 16x9
Rear I was thinking either 3.5" lips to make 16x9.5 or 4" to make 16x10
Keep in mind I will be using coilovers, stretched tires and willing to pull the edge of my fenders out.
Will this setup work on my car? Tires OK for that kind of stretch? Any comments/criticisms mystikal? After all, you'll have to be seeing the outcome on streets of TO :)

Your front's sound like they're spot on!
But I think you'll need some good fender work (i.e. heavily rolling/pulling) for the rear with that low of an offset.

16x9 = -1 offset
16x10 = -14 offset
Won't work. I know you remember Qimis' car, his rears were 16x10 -3 or so and had fibreglassed, severely flared fenders. Of course yours being 11mm further out just means disaster.
16x8.5 +5 front and 16x9 -1 rear is a lot more realistic, and will still look spectacular with pulled fenders.

The front will be fine, the rears should be okay with an absolutely flat roll and those springs. It'll be close though! Be sure to bring the car out to the E30 meet, I should be scheduling that for next month.

lol, I still remember as recent as '04 people saying there's no way anything wider than a 225 will ever fit an E30. Now I've got guys daily driving 245s all around with no fender rolling, haha!

Yeah I remember his car, I hated his rear fenders. Fack me running this sucks. So I'm fine with the 16x8.5 in front but I want at least 16x9.5 in back........hmmmmmm what to do??? I need different RS (higher offset) faces out back?

Yup, you need higher offset inners. The ones you have now aren't at all ideal for going wide. With the right starting point 16x9.5 is easy.
