Having it all itemized with the cost appropriated and signed off on by both myself and the insurers gives me more peace of mind.
It's not perfect and there are surely other places that can do similar things but that's where I ended up. And the minute I get another daily the e30 will get a full collectors car, agreed value insurance plan. Yea I was in my e30 for about $15k including the purchase price of the car when it was totaled. I had every single receipt documented, all brand new parts, etc. My first offer from them was $2,500 , then hit a brick wall at $5,500. I wish I could find what my car was being compared to lol. Went on for over a year.
I believe you have to be 25 for classic car insurance, I may be wrong though. I'm 24 now...

I have an agreed value with Hagerty. You can't daily drive the car, of course. But even my relatively stock (but 70K mile) car isn't able to be replaced for anywhere near the book value.

I'm trying not to keep track, but I wrote down my parts orders on just my basic M52 swap, and that says I've surpassed the 5k mark somehow.
From a quick tally of larger things I remember buying, I think I'm almost at 15k into this E30 (not including original purchase, stuff acquired via trades, or frequently consumed things like tires/brakes/oil.)
I have owned this thing ~5 years now.

I have well over 20k invested in mine and I carry only comprehensive as well. I looked into Hagerty insurance but at the time had a ticket on my driving record and they would not insure me. Apparently if you have any citations within 5 years they will not issue you a policy.

The big question is if the e30 is your daily driver. If that's the case, technically you aren't covered by collectors/classic car insurance.
Classic car insurance is excellent, but it is very limiting on what you can use the car for. From what I remember, you can only drive to car meets and that's it. Any other activity like grabbing groceries, driving to work, DD, etc, is frowned upon if caught. You are allowed to go on casual drives so that leaves some room for interpretation. The main idea behind this type of insurance is that the e30 isn't your DD, and you drive another car most of the time.
If you must DD the e30, look into full coverage w/ an agreed value policy. It is much more expensive but you will be covered. You'll require vehicle appraisal and up-to-date comprehensive record of what has been put into the car (receipts, photos, etc).
