My power goals are 300-400 WHP, what's the best m20 model & internals to use?

I would start with whatever m20b25 you have available. Change the oil, timing belt / water pump, and spark plugs. Then get the cheapest ebay turbo kit you can find. Get a MegaSquirt 2. Run it until it blows up (~2 weeks)sigpic

There is no shortcuts to happiness. There are two paths to go
1) learn it hard way and study everything from engine hardware and tuning. There are several books that help. Internet is full of scattered pieces of information, but also misleading stuff that may lead to wrong decisions.
2) Let professional do the build
I'd use std M20B25, but properly sized turbo, +500cc injectors, intercooler, clutch, standalone engine management, tune it and drive.
