Rich's Custom Upholstery. I almost had my interior redone by him, he's got an e30 vert of his own, always has cool stuff in his shop and doesn't seem too pricey.

I don't want to play with staggered wheels on an AWD car. The Passat is heavy and you have to rotate the tires regularly, or it shreds the tires quickly.
